Cacio de Roma is made middle-aged sheep milk cheese typical of the Roman Campaign, Lazio.
It is presented with straw-colored crust with a few dark reflections. The dough is rather compact, slightly glanced. Sheep cheese typical of the Roman tradition. Milk is harvested in the pastures near Rome (“km 0”). An aging of over 60 days gives it a strong and intense taste. Recommended for DOC Romans who love the true Cacio Romano.
